Satay / Sate (沙爹)

Satay/Sate/沙爹 (grilled meat on a stick or skewer) is one of the popular dish over here, and one of my favourites too. So far, the best satay I have tasted is the Hj Samuri Kajang Satay - juicy & tender meat with lotsa varieties : chicken, mutton, beef, fish, deer, rabbit, rabbit, ostrich, intestine, liver etc. :( I missed them.. One of the "must have" food (highly on the list) if I travel to Kuala Lumpur by car - The satays are available at Restoran Jejantas Sg Buloh.

Belows are satay I bought locally in Penang, from the pasar malam near my work place last Friday. Tasty as well but not as good as the Satay Kajang :)

And not forgetting, the thick & tasty Peanut Satay Sauce..

I love Lok Lok (especially the cockles & kangkong/water spinach with cuttlefish) and Satay Celup too.. Any Satay lovers here?

Oh.. those sate look a little bit different than Indonesian sate, even the peanut sauce.

If the Msian sate tasted the same like Sporean sate, then definitely it tasted completely different than the Indonesia one.

The Sporean sate is very sweet and has curry flavour.

We have pork sate without dipping sauce. It tasted sweet like char siew :)

hey, I love satay too and I m sure that there is a good one in Pg to rival ur one in KL. We are famous for the eats u know !
U should try exotic HK razor clamps, NZ mussels, Scottish (UK)lobsters, scallops, smoked fishes, oysters from Korea...
I like to eat :) :D and worry about my waistline too :)

Yeah, I have read about Satay in Indonesia - satay padang, satay lilit, satay susu, satay madura etc but never tasted them before ;) Hehe, I have never tasted the Singapore satay as well, so I can't tell u whether there's any difference or not, but I presume Malaysia satay is similar to Singapore satay :) We have pork satay here as well.. by Chinese loh..

yeah, saw your post... and I notice you & your mum ate quite a number of satays... The Hj Samuri Kajang Satay is just too delicious.. I alwas put in lotsa chilli into the peanut sauce cos I like it spicy :)

So far I haven't come across any nice Satay in Penang that can beat Hj Samuri Kajang Satay :) Or do u have any recommendation for satay in Penang? I would surely love to have a try :) Everyone loves good food :D

Yeah, I tried the pork satay in Kuching several years back.. in 1998 or 1999 (I was working in Sarawak General Hospital at that time). I can't remember exactly where I had the pork satay.. if not mistaken, it's in Hui Sing Hawker Centre :)

aiyak, not only eat cucumber lah... must eat the red onion also :P

Fish Satay? I tried before.. the Hj Samuri Fish Satay (out of curiosity), but I don't like it either.. :D But since buy liao, might as well eat loh.. not good to waste food :P

there are two type of rice to accompany satay.. either ketupat or nasi himpit loh.. :)

eeekk ... i definitely stay far far away from lok lok in the public places.

SG have a few variety of satay available.

1. Malay styled satay is sweet & spicy.

2. Chinese (hainese style) satay less spicy & mild, obviously uses different marinate. but they add minced pineapple into the peanut dippin sauce. nice sweet & tangy taste.

3. Java style satay available here packs with lots of aromatic spices like cumin (i like it especially with mutton). but i think less sweet but also less spicy :P

*hands up* I'm a satay lover too!! And everyday I pass the Sg Buloh Overhead Bridge Restaurant! So satay whenever I want!! Goodie-goodie!!
Satay with cucumber and red onion - heavenly..(but not the breath after!!) Love how Hj Samuri gives a huge bowl of peanut sauce...delish! And I always ask for extra cos it's always never enough!

i love satay too. in ipoh, there's an outlet selling satay by the name of satay endut. however satay samuri is the best i've ever tasted.

Me, me! I love satay! But haven't had any for a long time now. Many months already. But you might have changed things. If I see a satay stall on my way home this week I'll stop and buy some. Otherwise I'll just drool over your pictures.

so many different satay styles in Singapore :) I guess the one here in Malaysia is similar to the Malay style in Singapore? :)

I love hot & spicy stuff.. I prefer the satay peanut sauce or gravy to be spicy too ;)

Your next project after baking scones :) I remember helping out my friends making satay.. grilling the satay & preparing the satay sauce during my university time.. some of my malay friends from afar (Sabah & Sarawak) didn't go back home celebrating Hari Raya Aidilfiltri.. so we had our mini celebration inside the campus.

er, I think making my own satay could be quite hazardous... not enough ingredients... but then again, that was what I thought before I started baking cakes, and stuff!! Maybe, maybe... *looks around for the skewers, and the coconut milk*

I never prepare satay on my own (too troublesome for me to do so, hahaha), but I helped out my friends before.. I don't have their recipes but below are the recipe from Amy Beh :)

Satay,
Ingredients
# 675g chicken, beef or pork, sliced into 2.5cm pieces and lightly scored to tenderise the meat

Marinade (combine in a bowl):
# 1 tbsp ground coriander
# 1 tsp ground turmeric
# 1/2 tsp chilli paste
# 1 tsp cumin powder (jintan putih)
# 1 tsp fennel powder (jintan manis)
# 1 tbsp lemon grass (serai), sliced and pounded finely
# 2 thin slices galangal (lengkuas), pounded finely
# 1/4 tsp pepper
# 2 tbsp sugar
# 1 tbsp light soy sauce
# Salt to taste
# 3 tbsp pati santan

Method
Mix meat with marinade and allow to stand for more than an hour. Thread meat onto satay sticks or skewers.

Brush meat with pati santan or remaining marinade just before grilling over heated charcoal. While grilling, brush occasionally with oil.

Satay Sauce,
Ingredients
Ground spices
# 15-16 dried chillies
# 2 fresh red chillies
# 12 shallots
# 2 cloves garlic
# 4 candlenuts
# 1 stalk lemon grass
# 1 tsp fennel powder
# 1 tsp cumin powder
# 1 tbsp ground coriander
# 2 slices galangal
# 6-7 black peppercorns

Ingredients
# 200g roasted peanuts, coarsely ground.
# 1 grated coconut, squeezed for thick milk
# 250ml water, to be added to the residue of the squeezed grated coconut then squeezed for thin coconut milk.
# 1 tbsp tamarind paste, mixed with 100ml water and squeezed for tamarind juice.
# 1 ½-2 tbsp sugar or to taste
# 1 tsp salt or to taste
# 5-6 tbsp oil

Method
Fry ground spices for 2-3 minutes in a little oil. Add a little of the thick coconut milk and simmer until oil rises. Pour in thin coconut milk and tamarind juice. Continue to simmer for 10-15 minutes.

Add the ground peanuts and thick coconut milk. Simmer for 2-3 minutes. Add sugar and salt to taste. Cook for a further 3-4 minutes before turning off the heat.

BTW, what is galangal and pati santan (is it a kind of oil), turmeric? Can I use peanuts instead of candlenut (dunno what kind of nut this is?)...Anyway, thanks a lot, I am quite excited now.

yeah.. spicy peanut satay kuah is the best. Eating satay without kuah is just like missing something essential :D

pati santan is coconut milk.
galangal/lengkuas is something similar to ginger.
tumeric is one of the spice we used quite frequently over here. We called it as kunyit in Malay language. It gives yellow colouring to the food.
regarding candlenut.. mmmm.. sorry, I have no idea about that.. I guess if u omit that, it's alright as well, cos previously when I helped out my friends making the sauce during my university time, we didn't use candlenut either.. (I don't have my friend's recipe with me)
